you will need to have the reference for the coins in autoload and actually has a spawner to spawn coins in these levels

Okay, but when I take any action and the coin dies, I do it again and it responds again

You could also, not reload the scene. Store the initial position of the player on the scene. If he dies, you just “respawn” him in the initial position. This way you are not reloading the scene, keeping the coins collected.
