I fogot to add grass to the Demo but you can use the leaf shader for grass and adjust some parameters. The project has two Shader Globals variables that control the Wind Direction and Force, you can make a gdscript and change these two variables at runtime and all the vegetation will be updated. I tried to make the shaders scale from Wind_Force 0.01 ( 1 KM/H) to 1.0 ( 100 KM/H) so at runtime you can increase or decrease the wind in this range, but some models need fine tunning.
I updated the demo project to include a grass shader (a modified version of the leaf shader).

if the generated tree has vertex color data then it will be compatible.
