Question
Am I getting crazy? I can’t find the easing curve in the keyframe properties anymore?
Select one of your recorded animation keys, then the Ease property will appear.

I think it might be a bug or inconsistency.
I’ve used “Add Track > 3D Scale Track”.
If I do “Add Track > Property Track” and select the Scale, then I can see the easing curve when selecting a keyframe:
